– Rice – Sabut Masoor dal – Onion – Tomato – Potato – Carrot –Green peas – Ginger – Garlic – Oil or ghee – Salt + whole spices + spice powder
– Wash and soak the rice and dal. – Chop all the vegetables and have them ready. – Press the saute function in the instant pot and add oil or ghee to the inner pot. – Add the whole spices, let them become aromatic.
– Add the sliced onions and saute until translucent. Add the grated ginger and garlic and the rest of the vegetables. – Add the spice powders. Give it a good mix and let it fry. – Add the drained soaked rice and dal to the Instant Pot. Mix well and add water. – Pressure cook.
– Serve the vegetable masala khichdi hot with a drizzle of ghee.
