Buttered Sweet Corn Salad

Buttered Sweet corn salad is one of the recipes that can be made very quickly and can be used as a snack or as a salad before a meal. Also, this is a kids-friendly recipe as my boys love them. This is a common street food in India

We look forward to summer for many things. The first and foremost reason is that we have a summer break. That means more time cuddling with the kids in the morning, spending a lazy day in the pool, and family vacations.

One of the other reasons is food. We, as a family are foodies and love to experiment with different food. Not sure if my boys eat well because I am a food blogger or if I became a food blogger as they eat well. But either way, it is a win-win situation for us.

I hardly have to struggle to make them eat their vegetables or try new foods. In fact, one of their favorite food is a salad. That is going to be my theme for this week.

Salads need not be complicated with loads of vegetables and dressings. It can be as simple as this Buttered Sweet Corn Salad, which happens to be one of my boy's very favorite salads.

I try to incorporate one salad with a meal at least 2 to 3 days a week. I make bean salad, and lentil salad (sundal) and sometimes make an elaborate and filling salad which becomes the dinner itself.

We were first introduced to this Buttered Sweet Corn Salad in India. We ate this for the first time at a mall in Coimbatore and even though the boys felt the corn in the US was much sweeter and flavorful, they liked the idea of using corn to make this Buttered Sweet Corn Salad.

As the name suggests, the corn was buttery and had a little bit of heat from the red chili powder and tanginess from the lime juice and chaat masala.

I have used frozen corn kernels to make this Buttered Sweet Corn Salad. This gives us the opportunity to make this salad any time of the year and not just in summer. You could use fresh corn kernels and steam them a bit to make them tender.

Preparation time - 5 minutes
Cooking time - 10 minutes

Ingredients to make Buttered Sweet Corn Salad - Serves 4

  • Sweet corn - 2 cups (I used frozen corn)
  • Butter - 1 tbsp
  • Salt - to taste
  • Black pepper - ¼ tsp
  • Red chili powder - ¼ tsp
  • Chaat Masala - ¼ tsp
  • Lime juice - 2 teaspoon (or as needed)

Procedure to make Buttered Sweet Corn Salad -

  • I made the recipe using frozen corn. If using fresh corn, separate the kernels and steam them until they are tender.
  • In a pan, add the sweet corn along with 2 tablespoon of water and let it simmer until it thaws and softens. You could do this in the microwave as well.
  • Once the corn is thoroughly thawed and warm, add the butter along with the spices and salt and mix.
  • Let it warm through and then turn off the flame.
Cooking the corn
  • Squeeze the fresh lime juice and serve the Buttered Sweet Corn Salad warm.

  4. Buttered corn is one hit salad which all like .This corn has become popular recently, previously we used to get only on the cob .i don’t know about US , but here we have some 20 - 25 flavours !
